Truth be told, I’m not one for cooking. It’s not that I don’t mind being in the kitchen or following a recipe, it’s usually the time, energy, and effort that goes into creating a meal that often holds me back. I typically end up eating a bowl of cereal and calling it a night. With our wedding wrapped up and a million new kitchen products (shown in the photo, this cutting/serving board and this knife set) and a few new cookbooks at our disposal thanks to our registry, I figured it was time I take on a new challenge in our marriage – the kitchen! Disclaimer: My husband LOVES to cook. I typically leave him in charge and I’m often the taste-tester and/or baker of desserts.
So my new recipe column for TBO is going to be all about easy recipes for one or two people, maybe even a few meals thrown in for larger parties (a goal of mine this fall is to host my first dinner party), if I can recreate the meal, so can you! I’m not the biggest fan of leftovers, so I sometimes I’ve made this great meal, which is more than enough for my husband and I to eat and the rest goes to waste. We received a few cookbooks meant for couples or 1 to 2 people, so I’m anxious to tackle a few of those recipes!
First up, this super easy appetizer for warm summer afternoons – I followed this recipe and voila, one of the easiest apps ever to make and enjoy! I poured myself a glass of wine and caught up on some magazines!
Ingredients: Off the vine Tomatoes, Mozzarella, Basil Leaves, Balsamic Vinegar
Directions: Slice your tomatoes and mozzarella. Layer the slices over basil leaves. Drizzle balsamic vinegar and salt/pepper for taste if needed. Don’t forget to add crackers and pour yourself a glass of wine!

I’m not much for cooking either. It’s hard with just two people! Throw in the fact that I’m a picky eater and it becomes nearly impossible. Looking forward to see what you whip up :)
